Wine of Crémant de Limoux appellation
The Crémant de Limoux AOC differs from the Blanquette in terms of its blend and its ageing process. Made primarily from Chardonnay and Chenin Blanc, the blend can also include Pinot Noir and Mauzac, which together must not exceed 20%.

This sparkling wine is made according to the method known as “traditional”, in that the second fermentation occurs in the bottle (as it does in Champagne). The bottles then rest on the lees for 9 months before the addition of the “liqueur d’expedition” that will determine the level of sugar in the wine. Once the final cork is in place, the Crémants de Limoux age in the cellar for at least 15 months before being released for sale.

Crémant de Limoux is recognizable by its pale colour, its very fine bubbles, its nose of white flowers and citrus along with slight toasted notes.
