is the property of Françoise and Stéphane Dief, two wine enthusiasts who vinified their first wne in 1998. In 15 years, the vineyard has grown from 12 ares to 18 hectares. Their philosophy is: to produce the very best, to obtain quality whatever the cost, both in the vineyards and in the winery; to seek a balance between all the constituent ingredients of the wine producer’s craft; and to use the best of both traditional and modern techniques.
Three terroirs with clearly differentiated but complementary styles make up the Clos Manou vineyards in equal parts: deep gravel on clay on the edge of the Gironde estuary, sandy gravel located down slope and clay on limestone in the commune of Couqueques. The vines are grown according to the dictates of organic growing, receiving meticulous and sustainable treatment. The harvest is carried out by hand and vinification takes place at low temperature; extractions are achieved by pumping-over operations in concrete tanks and solely by manual punching-down operations in the wooden vats.
Clos Manou is aged for 17 months in new oak barrels exclusively from French forests. The second wine, Petit Manou, is aged for 12 months in barrels already used for the first wine.
