« The mineral reduction character is stronger and largely if not completely pushes the elegant if slightly exotic white flower and tidal pool aromas to the background. This is unusually refined for Butteaux with its caressing and tender middle weight flavors that possess fine complexity, punch and persistence on the understated and relatively dry finish. About this wine : Dans les premiers crus, [...] la belle fermeté minérale du Butteaux sont dignes et prometteurs.

About the vineyard : Géré par Jean-Loup et Guillaume Michel, ce domaine fondé en 1850 s’est toujours fait le chantre des chablis premiers crus très purs et très nets, sans utilisation du bois. Discrets dans leur jeunesse, ces chardonnays sont bâtis pour évoluer de dix à vingt ans en bouteille. Le domaine développe un style de chardonnay de prime abord assez direct dans l’expression du fruit, mais avec des finales en retenue, voir très jugulées.

About this wine : Vraiment intense au nez. Nerveux et raffiné avec des notes plaisantes de pierre mouillée - un vrai style chablisien. Pas si concentré en bouche mais avec un très bel équilibre et une vraie précision.

About the vineyard : Guillaume Michel tente de faire mieux connaître ce domaine en France, même si l'essentiel de la production part toujours à l'export. Le patrimoine de terroirs est remarquable, avec notamment les trois expressions du premier cru Montmains (Montmains, Forêt, Butteaux), une première à Chablis. Des vinifications en cuve inox (depuis 1969), en levures indigènes depuis 2008, des élevages longs et le moins interventionnistes possibles, ces vins de temps démarrent souvent discrètement en bouteille mais expriment avec les années leur magnifique pureté cristalline dans le verre. Tous les parcellaires ont été produits en 2016, notamment les différentes déclinaisons de Montmains et de Vaillons.
