About the vineyard : Racheté voilà près de vingt ans par Bouchard Père et Fils, William Fèvre a su se hisser au premier plan de l'appellation sous la houlette du talentueux Didier Séguier. Certes, il avait à sa disposition l'un des plus beaux patrimoines de vignes de la région, avec notamment 5 des 7 grands crus, sans oublier tous les principaux premiers crus. La viticulture est des plus soignées, et depuis longtemps la vinification s'efface au profit de l'identité des crus. Les vins s'ouvrent assez rapidement mais par expérience nous savons qu'ils vieillissent toujours très bien.

About the vineyard : Grand "homme" de Chablis et avocat passionné de ses meilleurs terroirs, William Fèvre s'était beaucoup battu pour une définition stricte de l'appellation, avant de s'enferrer dans ses vinifications sous bois neuf. Le domaine a été repris par le maison Bouchard et le très compétent directeur, Bernard Hervet , a imposé sa rigueur et sa passion sans compromis. Stéphane Follin-Arbelet poursuit dans cette voie. Avec un domaine de plus de 45 hectares, dont plus de la moitié en premiers crus (12 ha) et grands crus (15 ha), William Fèvre exploite quelques-uns des plus beaux lieux-dits du vignoble chablisien.

About the vineyard : Acquis par la maison beaunoise Bouchard Père et Fils, ce domaine possède un vaste vignoble et une palette unique de grands terroirs chablisiens, valorisé grâce à une organisation méticuleuse : travail des sols, vendanges manuelles à date optimale, régulation des rendements. Le vinificateur, Didier Seguier, produit ainsi des chablis purs, très bien définis et nets. Avec, sur les grands millésimes comme le 2005, un sérieux respect du terroir dans l’expression de la minéralité.

Beaucoup de fraicheur et énorme minéralité tempérées par une très agréable tendresse. Belle association avec une dorade royale de méditerranée poêlée.
