Ermitage du Pic Saint Loup
is a family-owned property run by Jean-Marc, Pierre and Xavier Ravaille. They have turned the Ermitage du Pic Saint Loup domaine, which was the kingdom of sheep, olive trees and vines after the French Revolution, into a flagship of the Pic Saint Loup appellation. For the Ravaille brothers, winemaking equates to a constant quest for perfection. The vineyards, backing on to the first foothills of the massif, on the Saint Mathieu de Tréviers hills, have been biodynamically grown for several years, and the domaine has been committed to organic farming since 2009, obtaining its certification in 2012.
There are pronounced variations in temperature in the Pic Saint Loup area during the grapes’ ripening season, especially in summer when the days are hot and the nights cool. These temperature variations are a feature of the Pic Saint Loup climate, which plays an important part in the typical character of the wine. The Ermitage du Pic Saint Loup
vineyards are harvested by hand at good maturity, usually in the cool of the morning. Here they select grapes whose yield has been controlled by pruning. They take good care of these grapes, ensuring they are subjected to minimum stress from the harvesting to the vat. The vinification of the Ermitage du Pic Saint Loup
wines is the high point of the year. Together, the three brothers, put their hearts and souls into the process. Terroirs and grape varieties are vinified separately. Their identity and authenticity come through in the blends, aged for one to two years in vats or in barrels whose wood is selected according to the grape variety they will contain.
