Domaine Patrick Baudouin
is a family-owned property located in Chaudefonds-sur-Layon. Patrick Baudouin is the fourth generation and today oversees a vineyard with 13.5 ha of vines in production. Domaine Patrick Baudouin
started work on converting its vineyards to organic growing in 2002. It also immediately starts the conversion process on any new vineyard parcels which it rents or purchases, if they are not already organic. Patrick Baudouin has been ploughing the soils since 1997, then he abandoned the use of chemical herbicides, and since 2001, the use of synthetic treatments too. None of the wines have been chaptalized since 1994, restricting the addition of components not in the original grape juice to minimal doses of sulphur.
Domaine Patrick Baudouin produces dry and semi-dry white Anjou, exclusively from the Chenin grape variety. It also produces small quantities of the Quarts de Chaume and Coteaux du Layon sweet wines, obtained exclusively from the natural concentration of the grapes on the vine, as well as red Anjou and Anjou Villages, from the Cabernet Franc and Cabernet Sauvignon. Patrick Baudouin is a perfectionist who is always experimenting in his quest for a viticulture of quality, the expression of the terroirs and the drinking pleasure afforded by wines full of fruit.
