About this wine : Fin, élégant, racé, un chenin de grand éclat, conciliant admirablement droiture et profondeur, avec un fruit pur. La classe !

About the vineyard : Avec 80 % de chenin, ce vignoble de 45 hectares s’exerce à tous les styles de blancs. La famille Papin le fait avec bonheur et un enthousiasme de chaque instant. René vinifie, pendant que son frère aîné Christophe œuvre aux vignes. Pas en bio, certes, mais les sols sont travaillés « à leur façon ». En cave, le même soin prédomine, avec une variété de cuves de toute nature (inox, ciment, cylindriques, enterrées, bois de 30 hl signées Stockinger...), aptes à ciseler des vins nuancés et complexes. Les liquoreux sont la grande force du domaine, de même que la série des savennières (13 hectares), impeccable de justesse. Les petites cuvées de rosé et de rouge sont un ton en dessous.

About the vineyard : Pierre Papin, à 50 ans, acquiert le château Pierre Bise en 1959. Les 9 hectares de vignes sont légués à son fils en 1974, qui travaille ensuite sur des parcelles à Rochefort, Quarts-de-Chaume et Chaume à la fin des années 1980. Claude Papin généralise l’enherbement du vignoble au début des années 1990. Le château Pierre-Bise voit à nouveau sa superficie augmenter en 1992, après le rachat de parcelles du Clos de Coulaine, en appellation Savennières. Le descendant Christophe Papin s’installe au château Pierre-Bise en 1997. Dans les années 2000, après un nouveau achat, le vignoble culmine alors à 50 hectares de vignes.
