Vinification :
After pressing, the must is cold-settling for 48 hours. Alcoholic fermentation occurs at temperatures between 16 and 18°C with a part ageing in oak casks.

8 months on lees in mid-muids (85%) and in new oak barrels (15%)

About this wine : Élégance du fruit frais et blanc, bouche gourmande bien tenue par une fraîcheur ciselée, tout en pureté, finale plus citronnée, bloquer une partie des malos était une idée judicieuse.

About the vineyard : Ancré dans ses convictions parcellaires, MIchel Chapoutier propose une interprétation des terroirs de la vallée du Rhône qui s'élargit d'année en année, ce sont ainsi plus de 50 vins que nous avons dégusté cette année, pour la seule vallée du Rhône. La biodynamie, autre axe majeur pour les vignes du domaine, donne ici des raisins qui vibrent à l'unisson de leur terroir. Les rendements sont souvent faibles et les prix élevés, mais la dégustation d'un grand millésime de Syrah du Rhône Nord comme 2015 permet d'approcher quelques vins proches de la perfection, notamment un Ermite d'anthologie. En 2016, un terrible orage de grêle au mois d'avril a quelque peu pénalisé Le Pavillon, mais l'Ermite et Le Méal s'en sortent très bien.

About the vineyard : Michel Chapoutier est un des plus brillants négociant-vigneron de France. Implantée à Tain, depuis plus de 200 ans, son entreprise familiale M. Chapoutier rayonne dans le Rhône (Ferraton Père et fils), dans le Beaujolais (Maison Trénel), en Provence (château de Ferrages), dans le Roussillon (domaine Bila-Haut), en Australie (cinq domaines) et même en Alsace (domaine C5 Altenberg) et en Champagne (Sténopée avec Devaux) sans oublier le domaine Pinta Vera au Portugal. Sous l'adresse Maison M. Chapoutier, nous regroupons les vins issus de la gamme provenant de l’activité de négoce qui ne possèdent pas la magie des grands crus parcellaires (voir Chapoutier Sélections Parcellaires). La régularité de la production est exemplaire.

Later on, the coopers who produced the tonnage barrels used in Côte du Rhône settled in the area. In the 15th century, Condrieu wine was served at feasts and offered to noble personalities.
