About this wine : tender and soft

About the vineyard : Première pierre de l’édifice viticole d’Olivier Decelle (également présent à Saint-Émilion avec le château Jean Faure, en Haut-Médoc, en Bourgogne avec la maison Decelle-Villa et récemment dans la vallé du Rhône avec le rachat du domaine de Boisseyt-Chol), ce vaste domaine, qui a longtemps été le fer de lance des grands vins doux naturels, évolue brillamment depuis son rachat il y a plus de quinze ans. Sans négliger, bien au contraire, les vins doux, Olivier Decelle a immédiatement perçu la grande aptitude des terroirs de Maury à produire des vins rouges secs de haute expression, et s’est donné les moyens de les réussir. Sous la houlette du talentueux directeur Nicolas Raffy la gamme s’agrandit et se réinvente par petites touches, avec des vins aimables jeunes, mais capables de vieillir, telle la cuvée Initial, et des cuvées parcellaires plus ambitieuses, qui atteignent un niveau spectaculaire dans les derniers millésimes.

About the vineyard : À Maury, le mas Amiel compte 150 hectares de vignes en production, disséminées sur 132 parcelles, dominées par le château cathare de Quéribus. Olivier Decelle (également propriétaire du château Jean Faure à Saint-Émilion) a fait œuvre de mécène en le remettant peu à peu dans un parfait état de production, secondé en cela depuis 2007 par Nicolas Raffy, amoureux de ces terres. Avec la conversion vers la biodynamie, l’expression des vins va certainement encore évoluer dans les années à venir. Si les vins doux naturels n’ont pas été délaissés, loin s’en faut, l’accent a été porté sur la production de vins secs très modernes, avec une largeur de gamme qui couvre tous les styles. Une source incontournable !

About the vineyard : Protégé par la barre rocheuse où s'accroche le château de Quéribus, le Mas Amiel est, avec 145 ha, l'un des plus vastes domaines des Pyrénées-Orientales. En 1816, un évêque le perd en jouant aux cartes contre un certain Raymond-Étienne Amiel. Charles Dupuy, l'ancien propriétaire, a donné une grande notoriété aux vins doux naturels de la propriété, notamment à ses « vintages ». Olivier Decelle, qui a repris le Mas Amiel en 1999, diversifie la gamme en proposant des vins secs.

je confirme les avis précédents : un des rares vins qui se marie (très bien) avec le chocolat. La combinaison avec l'amertume du cacao est parfaite. 4* seulement car les essais que j'ai faits sur d'autres desserts ont été moins concluants.
