Food and wine pairings
Natural pairings include foie gras, whose bitterness is balanced by the wine’s minerality and intensity, as well as—more traditionally—fine shellfish, whose delicately rich flesh creates a spectacular harmony: lobster, spiny lobster, crab… Poultry and veal in white sauce also pair beautifully with it, as do blue cheeses.
Bettane & Desseauve
Rated estate (2023 guide): 3 stars (High-quality production, setting the standard in its sector)
About the estate:
Frédérick and Franck Buisson, whose family has lived in the village since the 12th century, represent the eighth generation of winemakers at this historic Saint-Romain estate. Certified by Ecocert since 2012, they practice viticulture and winemaking in the most natural way possible. The red wines, which always contain a small amount of whole clusters, offer a precise expression of their terroir, championing the rediscovery of a Saint-Romain that we have rarely seen at this level. The precise whites are no exception.

Rated estate (2023 guide) 1*Star (Up-and-coming stars or quality winemakers producing wines of a high standard—you won’t be disappointed when you taste the wines from these estates)
About the estate:
Frédéric, the winemaker, and Franck, the sales manager, run one of the largest estates in the southern part of the Côte de Beaune. Having practiced organic farming—certified since 2009—they made the transition to biodynamics in 2018. For the past ten years, they have been following the lunar calendar for their bottling. Diligent work in the vineyard and the cellar allows them to produce deep, distinguished wines that age well. This is an estate that beautifully showcases the Saint-Romain appellation in both red and white wines; the wines are refined, precise, and elegant. A range of wines that fully deserves its first star.
