It's superb with a nice rib of beef with bone marrow and with most game meats, especially wild duck rubbed with crushed spices...

About the wine:
The palate is defined with great precision, showing a sleek and elegant profile. The tannins are refined, and the aromas of pepper and chocolate are truly indulgent.
About the estate:
Laure Colombo, a young and brilliant winemaker, joined the family business in Cornas but wanted to establish her own estate on the outskirts of Saint-Péray to find her footing; starting this year, she is offering a Saint-Péray and a Cornas from her estate in Lorient. Joining the family business doesn’t mean taking it over; Jean-Luc is still here, so the range is built as a family effort, spanning the vineyards of the Côte Bleue and the Rhône, and of course the sourcing activities, sometimes under the Colombo & Fille label, sometimes under Jean-Luc Colombo. The Cornas wines remain the flagship wines here; it must be said that the modern, efficient winery is built at the foot of the hillside! In 2017, the delicious Vallon-de-l’Aigle will be in short supply—only two barrels were produced!

The last time I had the chance to taste this wine was last year—the 2001 vintage. It had a spicy, smoky character and an endless finish, and even a year later, I still remember it! A truly captivating wine for an unforgettable moment!
