Clay-limestone slopes with grep—marbled clays, terroirs that produce structured, balanced, and rich wines, well-suited for aging.

Viticulture

Integrated pest management, natural compost (sheep and cow manure), selection of buds and clusters, thinning to 4 to 5 clusters per vine, and leaf removal

Grape Harvest

hand-picked and placed in crates holding only a single layer of grapes to preserve the quality of the fruit

Winemaking

Maceration for 3 to 6 weeks (depending on the vintage), fermentation at 28 °C

Livestock farming

Aged on the lees in first- and second-fill barrels for 12 to 14 months; the vintage is bottled in a single batch, without filtration
