Two methods are used: cryoconcentration (the apples are harvested in the fall and pressed in the winter, and the juice is then stored outdoors) and cryoextraction (the apples freeze on the tree and are picked when the temperature is between -8 and -15°C); this requires more apples than a traditional cider and results in a more concentrated and intense flavor

Interesting; pairs well with desserts, much like a sweet Gaillac or a sweet Loire wine. A nice choice—a rare bottle to impress your friends, but nothing more.

Petit Frisson, enjoyed as a digestif, offers a lovely sweetness that is immediately balanced by a hint of acidity on the finish, resulting in a wonderfully refreshing sensation.

A wonderful discovery. It has a lovely aromatic complexity reminiscent of tarte tatin, yet retains a refreshing quality. Original and delightful as a way to end a meal.
