Two methods are used: cryoconcentration (the apples are harvested in the fall and then pressed in the winter; the juice is then stored outdoors) and cryoextraction (the apples freeze on the tree and are picked when the temperature is between -8 and -15°C), which requires more apples than traditional cider and results in a more concentrated and intense flavor
