Wine making

Two methods are used: cryoconcentration (apples are harvested in the fall and pressed in the winter, with the juice then stored outdoors) and cryoextraction (apples freeze on the tree and are picked when the temperature is between -14°F and -26°F), requiring more apples than a traditional cider, which is more concentrated and intense.

Interesting, pairs well with desserts like a sweet Gaillac or a mellow Loire wine. A nice choice, a rare bottle to impress your friends, but nothing more.

Petit Frisson enjoyed as a digestif, with a lovely sweetness immediately counterbalanced by a slight acidity on the finish, resulting in a wonderfully refreshing sensation.
