Two methods are used: cryoconcentration (the apples are harvested in the fall and then pressed in the winter; the juice is then stored outdoors) and cryoextraction (the apples freeze on the tree and are picked when the temperature is between -8 and -15°C); this requires more apples than traditional cider and results in a more concentrated and intense flavor

Interesting; it pairs well with desserts, much like a sweet Gaillac or a sweet Loire wine. A nice choice—a rare bottle to impress your friends, but nothing more.

Petit Frisson, enjoyed as a digestif, has a lovely sweetness that is immediately balanced by a hint of acidity on the finish, resulting in a wonderfully refreshing sensation.
