Most of the grapes are de-stemmed and vatted without SO2, with fairly long vatting periods (5 to 8 weeks) at a temperature of 22/30°C, with gentle extractions and regular work on the lees. After pneumatic pressing, free-run and press wines are blended according to vintage. Natural, unfiltered wine.

Nose
Aromatic fusion of ripe but crunchy red and black berries, caramel licorice and lightly waxed Mediterranean spices.
Mouth
Smooth, racy attack, fresh structure on a volume of small, imperceptible, lined tannins. Aromatic persistence on a mid-palate of undergrowth and complex mineral basement. Sweet finish, always in balance with the freshness and fine grain of the raw material.

Dark color, with an expressive nose of black fruits. Full-bodied, powerful and concentrated, the tannins are big, bold and muscular, and will need time to settle. But this wine will be good when it's ready, in a resolutely massive and intense style for the vintage.

The Châteauneuf Du Pape Vendange 2021 (80% Grenache and the rest equal parts Syrah and Mourvèdre) is charming, with ripe red and blue fruits as well as peppery garrigue and subtle Provencal notes. Ripe, medium to full-bodied, nicely textured on the palate, with supple tannins, it will shine from the start.
