About the wine:
Yalumba’s 2016 “The Signature Cabernet Sauvignon Shiraz” is a blend from the Barossa region, composed of 53% Cabernet Sauvignon and 47% Shiraz. Aged in a mix of barrels and 280-liter casks (28% of which are new), it offers aromas of cherry, blackcurrant, and tobacco, enhanced by graceful notes of cedar and vanilla. Medium- to full-bodied, it is concentrated, silky, harmonious, and long on the palate—a very classic claret style despite the high proportion of Shiraz. Each vintage of this wine is dedicated to an outstanding Yalumba employee; the 2016 is dedicated to cellar master Louisa Rose. 2021–2036

The latest vintage of this wine pays tribute to Louisa Rose, the estate’s chief winemaker for the past 30 years. It is a clear, complex wine that reveals notes of black cherry, blackcurrant, chocolate, mint, bay leaf, and peppery spices, enhanced by a hint of graphite. The palate is full-bodied and rich, yet balanced by fine, chalky tannins, with a hint of acidity in the fruit and undertones of roasted meat. Best enjoyed between 2022 and 2036.

About the wine:
The first impression is of an airy nose: floral notes, dark chocolate, graphite, and iodine. Captivating. While each of these characteristics is clearly present, they unfold on the palate like a journey on a magic carpet. On the palate, this wine hardly feels heavy despite its obvious body and vinous character. The tannins are very well controlled: granular and precise, almost pixelated. The finish is long.
