Domaine Bernard Defaix

The Bernard Defaix estate is located in Milly, in the heart of the Chablis wine region. Bernard Defaix, a fourth-generation winemaker, established himself in 1959 with two hectares of vineyards. Today, the estate covers 27 hectares, half of which are classified asChablis Premier Cru AOP. The first step in successful winemaking takes place in the vineyard, because "to make good wine, you need good grapes." The vines are organically farmed and rigorously monitored, allowing the grapes to reach their peak of ripeness and expression.
Thanks to skillful vinification and aging on lees in vats, the wines of the Bernard Defaix estate gain richness and are protected from oxidation.
