Domaine Sébastien Giroux

Estate: The Sébastien Giroux estate covers 7 hectares across four appellations: Mâcon-Fuissé, Pouilly-Fuissé, Pouilly-Fuissé Premier Cru (since 2021), and Pouilly-Loché. Its plots are mainly located in the commune of Fuissé, in the climats of "Les Belouses," "Les Petites Bruyères," "La Cadole," "La Roche," and "Les Vignes Blanches," for the 1er Cru. The Mâcon-Fuissé wines come from a plot located at the southern end of the village of Fuissé, not far from Chaintré In the commune of Loché, there is a single plot, "Au Bucher," but with two different planting years, which produce two vintages of this confidential appellation. The diversity of soils, altitudes, and exposures of each of the plots allows Sébastien Giroux to work with a constant concern for expressing each of his terroirs to the fullest. 

Philosophy: Since his arrival, Sébastien has gradually changed the methods of viticulture: greater respect for the environment, manual labor, and rigorous soil management. Since taking over the estate, Sébastien has been running it organically, as he is firmly convinced that only living soil can produce great wines. The certification application was made in 2019, and the 2022 vintage will officially be organic. Sébastien believes that certain plots of land are suitable for biodynamic farming, and he has been applying these practices since 2021 in order to produce ever more authentic wines. In the cellar, armed with this magnificent raw material, Sébastien advocates patience with long aging periods of 12 to 30 months, which is a real distinctive feature of the estate in the region.
