Domaine Sébastien Giroux

Estate: The Sébastien Giroux estate spans 7 hectares across 4 appellations: Mâcon-Fuissé, Pouilly-Fuissé, and Pouilly-Fuissé 1er Cru (since 2021), and Pouilly-Loché. Its vineyards are primarily located in the commune of Fuissé, in the “Les Belouses,” “Les Petites Bruyères,” “La Cadole,” “La Roche,” and “Les Vignes Blanches,” for the 1er Cru. The Mâcon-Fuissé wines come from a plot located at the southern edge of the village of Fuissé, not far from Chaintré In the commune of Loché, there is a single plot, “Au Bucher,” but two different planting years from which two cuvées of this exclusive appellation are produced. The diversity of soils, altitudes, and exposures across each plot allows Sébastien Giroux to work with a constant focus on expressing the full potential of each of his terroirs. 

Philosophy: Since his arrival, Sébastien has gradually evolved his viticultural methods: greater respect for the environment, and rigorous manual work on the soil. Since taking over the estate, Sébastien has been running it as an organic farm; he is deeply convinced that only living soil is capable of producing great wines. The application for certification was submitted in 2019, and the 2022 vintage will be officially certified organic. For Sébastien, certain plots offer the potential for biodynamic cultivation; he has been applying these practices since 2021 to produce wines of ever-greater authenticity. In the cellar, and drawing on this magnificent raw material, Sébastien advocates patience with aging periods ranging from 12 to 30 months—a true hallmark of the estate in the region.
