Romanée-Saint-Vivant
Romanée-Saint-Vivant is a Burgundy appellation with very deep clay-limestone soils that produces exclusively red wines made from Pinot Noir. The Grand Crus of this appellation very often have excellent aging potential; some should not be tasted until after about ten years, and sometimes even 20–30 years. Romanée-Saint-Vivant wines are very subtle and complex, with a rich bouquet of red and black berries, spicy and floral notes (often violet), as well as hints of forest floor as they age. On the palate, they are generally crisp and powerful, delicate and sensual, straightforward and well-rounded. The firm yet elegant tannins pair beautifully with game—both furred and feathered—whether braised or served in a sauce.
