It created this brand, which draws mainly on the many excellent supplies available to it on the Côte des Blancs. As a result, the wines are refined and well-balanced. Today, it is a great place to find fine champagnes from the Côte des Blancs at reasonable prices.

The Blanc de Blancs Premier Cru is defined by this Chardonnay, which oscillates between the freshness of the base wine and the reserve wines, which account for up to 40%. Its fresh nose of white fruits is complemented by hints of dried fruit and toast. The dosage coats the palate in the middle.

De Saint-Gall is a cooperative winery that is part of the L'Union Champagne wineries. Founded in 1966, it has more than 200 members and a large vineyard covering 1,400 hectares, 90% of which is premier and grand cru – 500 hectares are grand cru Chardonnay. This winery also supports winegrowers in viticulture. Cédric Jacoutin, the cellar master who arrived in 2000, acquired a wooden vat in 2012 for reserve wines. His winery, located in Avize, reflects his passion for great Chardonnays. The blanc de blancs are characterized by a subtle toasted reduction and creamy mousse. The Orpale cuvée, the winery's flagship wine, is a pure Chardonnay from four grands crus in the Côte des Blancs: Mesnil-sur-Oger, Cramant, Avize, and Oger. Malolactic fermentation is partial and disgorging takes place after more than ten years. The 2008 vintage was disgorged in 2020.
