About the estate:
Xavier Gonet started his own business in Bisseuil, a premier cru in the Marne Valley, with his wife Julie, née Médeville, from Château Gilette in Sauternes. They have a unique portfolio of vineyards: the family’s contribution of great Chardonnays from Mesnil-sur-Oger (Louvière, Champ d’Alouette), as well as fine Pinot Meunier (Mareuil) and Pinot Noir (Ambonnay and Bisseuil) wines. To ensure the wine retains greater liveliness as it ages, malolactic fermentation is halted. Furthermore, an increasingly significant portion of the base wines ferments in barrels, which enhances the finesse of the bubbles. We appreciate the perfect consistency of this distinctive range, a well-deserved reward for the coordinated efforts in viticulture and winemaking.

I was very disappointed by this champagne, even though I was already familiar with it. Two of the three bottles were really tart. What a shame! Until then, I’d always remembered it as a well-made champagne.

Very good champagne. For my personal taste, it could be a little "drier." However, the tasting was very enjoyable, and the guests were delighted. No complaints about the shipping. The package arrived on the scheduled date, and the packaging was particularly careful. Congratulations, and see you soon!
