About the estate:

Christophe Fargier trained in the United States in the early 1990s and opened Ninkasi in Lyon’s Gerland neighborhood in 1997. His concept was unique in France: combining a brewery with a bar-restaurant that also hosted concerts. As the brewery outgrew its space, the entire operation moved to Tarare, into a former dyeing factory featuring an Eiffel-style steel frame. As of 2016, Lyon is home to seven Ninkasi bar-restaurants, which carry on Lyon’s rich brewing tradition. All beers are top-fermented, contain no artificial colors or flavors, and are unpasteurized.
