This golden and copper-colored Triple, one of the first Triples from Champagne-Ardennes, is topped with an impressive head of foam. The nose is very expressive, immediately revealing ripe yellow fruits followed by toasted cereals. On the attack, the effervescence is lively, then the texture unfolds, full and warm on the palate, taking up all the space. The malty base is very present. The dominant flavors of candied and cooked fruit prevail, followed by spices (clove, pepper). The sweetness does not take over, and the peppery finish is surprising, with a long finish. About the estate:
Sommepy-Tahure, in Argonne, France's leading cereal and malt-producing region, is the birthplace of Jean-Bernard Guyot. He settled in a farmhouse typical of the region, which had been home to a brewery in 1859. This brewer and farmer is a fervent defender of the rural and historical heritage in which he lives: his Valmy beers are a national symbol of the Republic. The project he has had in mind for a long time is taking shape: to build an autonomous brewery. Already equipped with solar panels, a biomass boiler, a water treatment plant, and a well, he has planted agroforestry crops on the farm, makes his own yeast, and has even started making beer-aged cheese. Year after year, he is turning his dreams into reality.
