A ruby-red wine with deep black highlights, aged in barrels for a year, it reveals its charms right from the first whiff—a fiercely southern bouquet with scents of garrigue and eucalyptus, black fruits, and spices against a subtly oaky backdrop. The palate, in perfect harmony, offers power and roundness. It is supported by fine tannins, though still young, and is enhanced by toasty notes in its long finish. About the wine:

About the estate:
Established as an independent winery in 2001, this 20-hectare estate owned by the Salvestre family has since established itself as one of the appellation’s leading producers, as evidenced by the numerous awards listed here. The wines are made from schist-based vineyards situated at an altitude of 310 meters.

A great wine. It has that classic Saint Chinian flavor. I do miss the slightly olive-like aroma, though. It’s also delicious once it’s been open for a while.

It has great potential, but as of late 2016, it’s still too young to be fully appreciated… Two more years in the cellar, and I’ll open another bottle!

I wasn't convinced by the rave reviews after tasting it. Upon opening, the wine was mineral and even had a salty quality. It needs to breathe for a long time before serving. Perhaps it's still a bit too young. It's a bit puzzling and lacks consistency.

It may be a bit early to taste this wine from the garrigue, yet it’s already hard to resist. On the palate, it’s full-bodied, round, and very fruity, with soft tannins and notes of balsamic aromas, ripe cherries, and spices. If you liked this one, take the plunge and try the Sentenelle 310—named for its 310 meters of elevation, of course—without delay.
