A ruby-red wine with deep black highlights, aged in oak for one year, it reveals its charms right from the first whiff—a fiercely southern bouquet with scents of garrigue and eucalyptus, black fruits, and spices against a subtly oaky backdrop. The palate, in perfect harmony, offers power and roundness. It is supported by fine tannins, though still young, and is enhanced by toasty notes in its long finish. About the wine:
The estate stands out once again this year with this cuvée, which was already a favorite in the 2011 and 2010 vintages. About the estate:
After leaving the cooperative winery in 2001, this 20-hectare estate owned by the Salvestre family has since established itself as one of the appellation’s leading producers, as evidenced by the numerous awards listed on these pages. The wines are produced from schist-soil plots situated at an elevation of 310 meters.

Acidity on the finish, lacking depth. Fruity but very unbalanced.

A great wine. It has that characteristic Saint-Chinian flavor. I do miss the slightly olive-like aroma, though. It’s also delicious once it’s been open for a while.

It has great potential, but as of late 2016, it’s still too young to be fully appreciated… Two more years in the cellar, and I’ll open another bottle!

I wasn't convinced by the rave reviews after tasting it. Upon opening, the wine was mineral and even had a salty quality. It needs to breathe for a long time before serving. Perhaps it's still a bit too young. It's a bit puzzling—it lacks consistency.

It may be a bit early to taste this “song of the garrigue,” yet it’s already hard to resist. On the palate, it’s full-bodied, round, and very fruity, with very soft tannins and aromas of balsamic notes, ripe cherries, and spices. If you liked this one, take the plunge and try the Sentenelle 310 cuvée right away—310 meters above sea level, of course.
