Stored for 5 days in the cellar after harvest, followed by fermentation in temperature-controlled stainless steel tanks using cultured yeasts; the fermenting must was punched down by hand up to six times a day at the peak of fermentation, then pressed and racked off the lees, after which it was transferred to barrels for aging

Aged for 10 months in new French oak barrels (28%) and older 225-liter oak barrels, on the lees
