Pneumatic pressing. Selection of the first juices, then cold settling. Temperature-controlled fermentation (16-18°C). Roussanne and Grenache Blanc in new and one-year-old barrels, the rest in stainless steel vats. No malolactic fermentation.

About the estate:

The estate was founded by the union of two old Castelpapal families, the Establets and the Jeunes. A vast "tina" (cellar or barrel) was built on three levels, in keeping with the 72 hectares of vineyards on the current property, which was created in 1972.
