At low temperatures (22-24°C) to preserve the freshness of this rich, sunny vintage, which is very expressive, reflecting the climate that year. Great care was taken to preserve the elegance and finesse of the tannins by limiting the extraction of seed tannins as much as possible.

Livestock farming

18 months: 1/3 in concrete vats, 1/3 in truncated cone vats, and 1/3 in demi-muid barrels (not new); maintain a reducing environment.

Nose

Pure and vibrant bouquet of black raspberries, blackcurrants, and plum liqueur with hints of black spices, white and black pepper, candied orange and violets, chocolate, and freshly turned earth.

Mouth

Full-bodied and concentrated, with a smooth texture and a broad, grainy tannic structure, notes of black fruit, nuts, and crushed stone on the finish, excellent length.

About wine:

From one of Vignon's consulting clients, the Châteauneuf-du-Pape Cuvée Anonyme 2021 is slightly less expressive on the nose than its CdP blend, but it has more cherry notes among the strawberries and pomegranates. It is full-bodied, rich, and concentrated, with a long, tannic finish. Although of roughly equivalent quality, it is quite different in style, with perhaps slightly greater aging potential. The blend is 60% Grenache, 15% Mourvèdre, 10% Syrah, 5% Roussanne and Vaccarèse, 3% Muscardin, and 2% Counoise. Fermentation and aging take place in a wide variety of containers, including a significant proportion of amphorae.
