A Cévennes grape variety that fell into oblivion after the phylloxera crisis, it has been enjoying an incredible renaissance for several years now. Usually a robust, full-bodied wine that should be aged for at least three years before drinking, Chatus or Syramuse is presented here as a fruity, accessible wine, perfect for enjoying with friends and appreciating all the facets of the grape variety and terroir. Drunk with a selection of oven-roasted pork, slow-cooked for four hours, an excellent pairing with fruit, liveliness, and a rich flavor. Very good value for money. I regret not ordering more a few months ago, but I wanted to try it first.
