A Cevennes grape variety that had fallen into obscurity after the phylloxera crisis, it has been experiencing an incredible resurgence for several years now. Typically a robust, full-bodied wine meant for aging—one that shouldn’t be tasted until it has aged for at least three years—the Chatus, or Syramuse, is presented here as a fruit-forward, approachable “everyday wine” that allows you to appreciate all the nuances of the grape variety and the terroir.
