The vines of the Domaine des 3 Vallées are around fifteen years old and are cultivated in the traditional way, with controlled inputs. The Mediterranean climate and the influence of the Tramontane wind play a major role in the ripening of the grapes. During the harvest, the grapes are picked by variety and level of ripeness, so that the right balance can be found during blending.
