Wine Production

After destemming without crushing, the grapes are transferred directly to the fermentation tanks. Fermentation takes place at around 26°C, with racking and pumping over. The wine remains in the tanks for at least 3 weeks, followed by malolactic fermentation in French oak barrels.

About the wine:

Not yet bottled, the 2016 Galamus is a blend of nearly equal parts Syrah, Grenache, and Carignan, aged in 30% new oak. Notes of toast, cedar, and vanilla dominate the nose, but there’s plenty of rich, velvety fruit to balance things out. It’s full-bodied and well-ripened, bordering on warmth and excess, so drink it as soon as it’s released and over the next two years to enjoy its hedonistic qualities.
