The Brand Topa, a fledgling Basque company based in Bidart (Pyrénées-Atlantiques), began its journey in 2016 with the goal of producing an artisanal cider that is proudly Basque, 100% local, and 100% natural. The cider Topa is made from a variety of apples—about 12 different varieties—that are untreated and locally grown, to name a few (Anisa, Urteby, Mendiola, Minxuli, etc.). This Basque cider is crafted in accordance with tradition, undergoing a slow, natural fermentation at a low temperature for about 4 months.

In the Basque language, Topa means “The Encounter,” and that is precisely what its creators emphasize. With this new-generation cider, Topa brings a touch of modernity to this historic Basque Country beverage, embracing the spirit of togetherness and moments of relaxation enjoyed over a glass of fine sparkling cider nestled between the mountains and the ocean.

Apple cultivation in the Basque Country officially dates back to the 12th century, and cider was produced on a large scale until the 18th century, when production suddenly declined. It wasn’t until the 1990s that this local beverage experienced a resurgence, restoring its special place in Basque culture.
