Topa
The brand Topa, a young Basque company based in Bidart (Pyrénées-Atlantiques), began its journey in 2016 with the goal of producing an artisanal cider that is proudly Basque, 100% local, and 100% natural. The cider Topa is made from a variety of apples—about 12 different varieties—that are untreated and locally grown, including (to name a few) Anisa, Urteby, Mendiola, and Minxuli. This Basque cider is crafted in accordance with tradition, undergoing a slow, natural fermentation at low temperatures for about four months.
In Basque, " Topa " means "The Gathering," and that is precisely what its creators aim to foster. With this new-generation cider, Topa brings a touch of modernity to this historic Basque beverage, celebrating the joy of sharing and moments of relaxation over a glass of fine sparkling cider, nestled between the mountains and the ocean.
Apple cultivation in the Basque Country officially dates back to the 12th century, and cider was produced on a large scale until the 18th century, when production suddenly declined. It wasn’t until the 1990s that this local beverage experienced a resurgence, regaining its special place in Basque culture.
