The grapes are destemmed and crushed before fermentation. After fermentation and draining of the juice, the wine is racked manually without pumping to avoid any crushing that could release aggressive tannins from the seeds. Gentle pressing is used.

About wine:

A full-bodied wine with aromas of bramble and spices, dense on the palate with a drying finish. Keep it to allow the still very present tannins to mellow.

About the estate:

Étienne Sipp manages this important 40-hectare estate located on the hillsides surrounding Ribeauvillé, including the Kirchberg and Osterberg grands crus. The great wines here are, of course, Rieslings, as the terroirs of Ribeauvillé are wonderfully suited to this grape variety, particularly in 2013, 2014 and 2017, wines that age perfectly over several decades, as the estate can demonstrate by opening old bottles from the 1970s, bearing in mind that at the time, viticulture was far from complying with current organic standards (the estate is now certified). At the entry level, the wines express well the saline character that the upcoming communal appellations will soon require.

About the estate:

Passionate about his terroirs, Étienne Sipp organically cultivates a vast vineyard, including two beautiful grands crus: Kirchberg de Ribeauvillé and Osterberg, vinified with aging in mind and always refined. The plot-by-plot work carried out over the last few years is very impressive. We have a preference for the estate's whites, where Riesling reigns supreme. The heritage of this vineyard could allow it to go even further, and some wines disappoint: regretfully, we are withdrawing the star this year.
