Cold maceration (10–30% whole clusters) for 2–10 days (at under 10°C), fermentation in new French oak barrels (225–500 liters) for 17–28 days, kept at a low temperature, using indigenous yeasts, followed by malolactic fermentation in barrels as well, on the lees and sediment

Aged for 15 to 18 months in French oak barrels (2nd and 3rd fill)
