Château Dassault
Château Dassault —then known as Château Couperie—was acquired in 1955 by Marcel Dassault, "on a well-considered whim," as he liked to say. Renamed after him, the estate was equipped with state-of-the-art facilities, and the quality of its wines improved over the years. In 1969, Château Dassault earned its “Grand Cru Classé” classification, the result of the work of a team that, under the leadership of three generations, succeeded in making this Grand Cru Classé one of the finest in Saint-Emilion. Château Dassault was born of the vision of the great industrialist Marcel Dassault. Today, Laurent Dassault, grandson of this visionary engineer, manages the estate.
Sustainable vineyard management and two-stage leaf removal contribute to perfect plant health, allowing the harvest date to be pushed back as far as possible to achieve the desired ripeness. Château Dassault is a terroir-driven wine. The ripeness of the grape pulp alone is not enough; here, we seek extreme ripeness. This allows us to draw the maximum from this terroir and let it express itself. It is a necessary and ongoing quest. The grapes are hand-harvested and collected in small crates.
The Château Dassault winery also reflects this commitment to bringing out the expression of a unique vineyard and terroir. The delicate winemaking process takes place in small-capacity concrete tanks, allowing each plot to be processed separately and its individual character to be preserved. Malolactic fermentation is carried out in new barrels. The wine is aged in these barrels for 14 to 18 months.
