The Maréchal-Caillot Estate spans 10 hectares spread across five communes in the Côte de Beaune region of Burgundy: Pommard, Chorey-lès-Beaune, Savigny-lès-Beaune, Ladoix, and Bligny-lès-Beaune. For Bernard Maréchal, rigor is the guiding principle. Demanding of himself, his staff, and his vineyards, he is one of those winemakers whose goal is to maintain—to the great delight of fine wine enthusiasts—a high standard of quality and consistent production across all the wines of Domaine Maréchal-Caillot , regardless of the vintage.
At Domaine Maréchal-Caillot, nothing is left to chance. The work in the vineyard is extremely rigorous, vine by vine, bud by bud, and cluster by cluster. The vines are cultivated using traditional methods, without chemical fertilizers and with integrated pest management, under close supervision to limit yields and thus produce high-quality grapes. The harvest at Domaine Maréchal-Caillot is 100% manual, with green harvesting if necessary, involving an initial sorting by the “coupeurs” followed by a second sorting on a sorting table before pressing. The grapes are then destemmed, pressed, and macerated in vats with only their own juice. Vinification follows traditional methods in tanks, followed by 12 months of aging in oak barrels, 10% of which are new. The estate works with two coopers, with whom they have established a partnership based on trust regarding the origin, quality, and drying time of the wood, as well as the intensity and duration of toasting.
