The Maréchal-Caillot estate covers 10 hectares spread across five communes in Burgundy's Côte de Beaune: Pommard, Chorey-lès-Beaune, Savigny-lès-Beaune, Ladoix, and Bligny-lès-Beaune. For Bernard Maréchal, rigor is the guiding principle. Demanding of himself, his staff, and his vines, he is one of those winemakers whose goal is to maintain, for the greatest pleasure of fine wine lovers, a high level of quality and consistency across all of Domaine Maréchal-Caillot's wines , regardless of the vintage.

At Domaine Maréchal-Caillot, nothing is left to chance. The work in the vineyard is very rigorous, vine by vine, bud by bud, and bunch by bunch. The vines are cultivated traditionally, without chemical fertilizers and using sustainable methods, with particular attention paid to limiting yields in order to obtain high-quality grapes. The harvest at Domaine Maréchal-Caillot is 100% manual, green if necessary, with an initial sorting carried out by the "cutters" followed by a second sorting on a sorting table before pressing. The grapes are then destemmed, pressed and macerated in vats with only their juice. Vinification is traditional in vats, followed by 12 months of aging in oak barrels, 10% of which are new. The estate works with two coopers, with whom they have established a partnership based on trust regarding the origin, quality, and drying time of the wood, as well as the intensity and duration of toasting.
