Domaine Maréchal-Caillot

The Maréchal-Caillot estate spans 10 hectares spread across five communes in the Côte de Beaune region of Burgundy: Pommard, Chorey-lès-Beaune, Savigny-lès-Beaune, Ladoix, and Bligny-lès-Beaune. For Bernard Maréchal, rigor is the guiding principle. Demanding of himself, his staff, and his vines, he is one of those winemakers whose commitment is to maintain, for the greatest pleasure of fine wine enthusiasts, a high standard of quality and consistent production across all the wines of Domaine Maréchal-Caillot , regardless of the vintage.

At Domaine Maréchal-Caillot, nothing is left to chance. We carry out very rigorous work in the vineyard, vine by vine, bud by bud, and cluster by cluster. The vines are cultivated traditionally, without chemical fertilizers and using integrated pest management, with particular attention paid to limiting yields and thus obtaining high-quality grapes. The harvest at Domaine Maréchal-Caillot is 100% manual, green harvesting if necessary, with an initial sorting done by the “coupeurs” followed by a second sorting on a sorting table before pressing. The grapes are then destemmed, pressed, and macerated in vats with only their own juice. Vinification is traditional in vats, followed by 12 months of aging in oak barrels, 10% of which are new. The estate works with two coopers, with whom they have established a partnership based on trust regarding the origin, quality, and drying time of the wood, as well as the intensity and duration of toasting. The quality of Domaine Maréchal-Caillot’s wines and their consistency even in vintages described as “difficult” demonstrate clear expertise and a constant drive for improvement in pursuit of perfection.
