Domaine Maréchal-Caillot covers 10 hectares spread over 5 communes in Burgundy's Côte de Beaune region: Pommard, Chorey-lès-Beaune, Savigny-lès-Beaune, Ladoix, Bligny-lès-Beaune. For Bernard Maréchal, rigor is the basic principle. Demanding with himself, his staff and his vines, he is one of those winegrowers whose determination is to maintain, to the delight of lovers of great wines, a high level of quality and regularity of production for all Domaine Maréchal-Caillot wines, whatever the vintage.
At Domaine Maréchal-Caillot, nothing is left to chance. The vines are worked rigorously, vine by vine, bud by bud, bunch by bunch. The vines are cultivated in the traditional way, without chemical fertilizers and using a "lutte raisonnée" approach, with particular care taken to limit yields and obtain high quality grapes. Harvesting at Domaine Maréchal-Caillot is 100% manual, green if necessary, with a first sorting by the "coupeurs" and a second on a sorting table before pressing. The grapes are then destemmed, pressed and macerated in vats with only their juice. Traditional vinification in vats is followed by 12 months' ageing in oak barrels, 10% of which are new. The domaine works with two coopers, with whom they have established a trust-based partnership concerning the origin, quality and drying time of the wood, as well as the intensity and timing of toasting. The quality of Domaine Maréchal-Caillot 's wines and their consistency, even in vintages announced as "difficult", demonstrate a clear know-how and a continuous will to progress towards perfection.
