Food and Wine Pairings

Its lemony notes complement oysters well, and it also pairs beautifully with tarama and steamed or gratinated shellfish. Its sharp, full-bodied character enhances veal and poultry in white or creamy sauces, as well as mushroom risottos. Ideal as an aperitif with good gougères or with appetizers: parsley-crusted ham, mixed salads, quiches… It pairs perfectly with most goat cheeses, as well as Beaufort, Comté, and Cîteaux.

About the wine:

The nose is subtle, and the palate is very well-balanced, reflecting expert aging. This wine truly embodies the appellation’s character, with toasty and hazelnut notes.

About the estate:

With 80 hectares, Chanzy is one of the largest producers in the Côte Chalonnaise, producing wines—both from its own vineyards and as a wine merchant—ranging from the Côte Chalonnaise to the Côte de Nuits. The company is owned by a group of passionate investors and shareholders who are committed to taking the company to new heights. The Jessiaume family oversees the technical aspects of the estate, practicing “bioraisonné” viticulture and “protéodie” in the cellar, where the wine reacts to musical frequencies during fermentation. The results are promising, and although a few inconsistencies remain, we have identified some excellent vintages.

About the estate:

Located in Bouzeron, where it owns half of the vineyards, this 80-hectare estate (in the Côte Chalonnaise, with portions extending into the Côte de Beaune and the Côte de Nuits) has been managed since 2013 by Jean-Baptiste Jessiaume, its estate manager and cellar master, who comes from a long line of winemakers in Santenay. A wine merchant’s business complements the property. A unique feature: malolactic fermentation takes place with music playing, as the harmonic resonance is believed to promote the grapes’ full development.
