Chevalier-Montrachet
The Chevalier-Montrachet Appellation d'Origine Contrôlée (AOC) has been a Grand Cru appellation of the Côte de Beaune, in the Côte-d’Or, since 1937. On the label, the term "Grand Cru" must appear immediately below the name of each of these appellations in the same font size. The Chevalier-Montrachet appellation applies exclusively to the commune of Puligny-Montrachet.
In Montrachet, the soils are shallow over hard limestone, crossed by a band of reddish marl. In Chevalier, the soils are thin and stony: light rendzinas formed on marl and marly limestone. The seven hectares of vineyards classified for Chevalier-Montrachet Grand Cru wine yield only a limited production of approximately 300 hectoliters per year.
The Chevalier-Montrachet Grand Cru appellation produces exclusively white wines, which are made from one of Burgundy’s flagship grape varieties: Chardonnay. While nuances emerge among the different climats, they share common traits. With a golden hue and emerald highlights that turn yellow with age, the bouquet of this white wine evokes butter and warm croissants, ferns, dried fruits, spices, and honey. The body and bouquet are indistinguishable, as structure and harmony blend into perfect unity. Creamy and firm, dry and caressing, enveloping and deep, Chevalier-Montrachet wine possesses every grace beneath an unyielding character.
