Champagne Ayala
The Ayala House, based in the village of Aÿ, was founded in 1860 under the leadership of Edmond de Ayala. This family-owned house quickly expanded into England, becoming the official supplier to the Crown by producing a very dry, low-dosage Champagne for the Prince of Wales in 1865. This marked the beginning of “Champagne nature” and became the hallmark of Maison Ayala.
In 2005, a breath of fresh air swept through Maison Ayala, which had been taken over by the renowned Maison Bollinger. The wines’ style continues to be highly regarded: precision, elegance, and freshness. Today, Caroline Latrive—who joined the company in 2006 and has served as cellar master since 2011—ensures the quality of the champagnes, which are made primarily from Chardonnay.
