Champagne Ayala
The Ayala House, based in the village of Aÿ, was founded in 1860 by Edmond de Ayala. This family-owned house quickly expanded into England, becoming the official supplier to the crown by crafting a very dry, low-dosage Champagne for the Prince of Wales in 1865. This marked the beginning of "Champagne nature" and became the hallmark of Maison Ayala.
In 2005, a breath of fresh air swept through Maison Ayala after it was taken over by the renowned Maison Bollinger. The wines’ style continues to be highly regarded for its precision, elegance, and freshness. Today, Caroline Latrive—who joined the company in 2006 and has served as cellar master since 2011—ensures the quality of the champagnes, which are crafted primarily from Chardonnay.
