Champagne Ayala
The Ayala House, based in the village of Aÿ, was founded in 1860 by Edmond de Ayala. This family-owned company quickly expanded into England, becoming the official supplier to the Crown by producing a very dry, low-dose Champagne for the Prince of Wales in 1865. This marked the beginning of natural Champagne and became the trademark of Maison Ayala.
In 2005, a wind of change blew through Maison Ayala when it was taken over by the famous Maison Bollinger. The style of the wines is still appreciated: precision, elegance, and freshness. Today, Caroline Latrive, who arrived in 2006 and has been cellar master since 2011, is the guarantor of the quality of the Champagnes, made from Chardonnay grapes.
