Champagne Baron Dauvergne - Oeil de Perdrix Grand Cru Bouzy
3*Coup de Coeur
Hachette
"Structured finesse and assertive balance!"
This champagne has a very light salmon hue imparted by the skins of black grapes: in this case, Pinot Noir (75%) blended with Chardonnay, grapes from 2021 and 2020, sourced from grands crus in the Montagne de Reims. This color charmed our tasters, and even more so did the sweet fruitiness of the nose, divided between apricot, candied peach, red berries, pink Reims biscuit, and honey, as well as the pleasant roundness of a palate in harmony with the nose, refined by a beautiful acidity that gives it length. A superb champagne that could accompany even red meats, such as a rack of lamb.(Le Guide Hachette 2026).
