"From the cherry, it has the color and perfume - the fleshy fruit, the stone, followed by a procession of small red berries: it "pinotes". The palate is in unison, with power, complexity and length. The secret of this rosé? Our tasters partly revealed it: "a rosé de saignée, I bet". It's obtained by maceration of black grapes. Here, pinot noir (60%) and meunier grapes from old plots in Cumières. Expressive 1st nose with strawberry aromas. On aeration, notes of Nemours poppy. On the finish, a touch of pomegranate syrup.

About the domain :
Family business established in 1921 in Cumières. Maurice Delabaye became a harvester and handler, launching his own brand in 1959. Germain, who succeeded him in 2001, transferred the headquarters of the estate to Damery, which now covers almost 11 ha, spread over 10 communes (including Aÿ, Cumières, Hautvillers and Dizy). He is supported by his sons Victor (since 2014) and Yann (since 2022).

Superb bottle. It's technically very well done. But for connoisseurs, this is not a "light aperitif rosé champagne": it's concentrated and distinctive! I can see this bottle going perfectly well with exotic dishes, or a duck-based recipe...
