Pre-fermentation maceration for 5 days (5°C), followed by alcoholic fermentation in stainless steel tanks (between 24 and 26°C) with indigenous yeasts, malolactic fermentation in French oak barrels, and finally, post-fermentation maceration for 10 days

Aged for 14 months in French oak barrels (225 and 500 liters), then in French oak casks (7,000 liters), followed by a minimum of 6 months of bottle aging
