In stainless steel vats, with continuous pumping of the wine over the skins during the first 2 days, the temperature rises to 33-34°C in 5-6 hours, and fermentation lasts around 11-12 days.

Seductive aromas of ripe wild berries, blue flowers, new leather, and baking spices, with almost exotic notes of bay leaf, crushed flowers, campfire ash, and iron ore.

Mouth

A classic Brunello, elegant and richly structured, it remains fresh, fragrant, and fruity despite its aging in wood, with taut, polished tannins and aromas of raspberry compote, ripe Marasca cherries, star anise, and crushed rosemary. Excellent potential, a very elegant wine.

Alessandro Mori's Brunello di Montalcino Il Marroneto 2017 opens with a very distinguished and unique character that makes this wine easy to recognize in a range of Brunellos. This hot and dry growing season has resulted in more powerful aromas and, in some cases, riper flavors in the appellation in general. But this magically slender wine follows its own path, and the summer heat seems to have cemented almost exotic aromas of bay leaf, crushed flower, campfire ash, and iron ore. The wine is extremely silky and elegant, but instead of opulence, you get a refined tension accompanied by exalted and immediate aromas of fruit, flowers, and light spices.
