"Ziru is the old local name for the earthenware jars used to store oil and wine. This wine undergoes a long maceration, is aged in earthenware jars, and is naturally unfiltered. It smells of honey, heady, like the warm, thick scent of many blooming linden trees. There is honeysuckle, the buzz of a lazy, heavy bee, and richness—a wine with the sensuality of a sleepy summer afternoon. Golden and honeyed, yet with a wonderful thick, creamy bitterness underpinning it all; layered, dimensional, expressing itself in space, like a rich, impasto painting with a broken texture on raw linen stretched across a frame. Tasted after 8 days of aging: The wine has a golden-yellow color and is cloudy, which is concerning; the taste is borderline unpleasant, and everyone grimaced.
