"A true tribute to the Italian Vermentino grape!"

"Ziru is the old local name for the jars used to store oil and wine. This wine undergoes a long maceration, is aged in earthenware jars, and is naturally unfiltered. It smells of honey, heady, like the warm, thick fragrance of many blooming linden trees. There are notes of honeysuckle, the buzz of a large, lazy bee, and richness—a wine with the sensuality of a sleepy summer afternoon. Golden and honeyed, yet with a wonderful thick, creamy bitterness underpinning it all; layered, multidimensional, expressing itself in space, like a rich, impasto painting with a cracked texture on a raw linen canvas stretched across a frame. Lanolin and aloe, freesia and baked pear, candied grapefruit peel, bay leaf, luminous lemon leaf. Absolutely magnificent. 2022–2027" (Jancis Robinson 2023)

The grapes are chilled, and all operations are carried out in the absence of oxygen using dry ice to preserve the grapes’ aromas and reduce the use of SO2. The grapes are destemmed, followed by fermentation in terracotta amphorae (ziru), which are then sealed so that the wine can continue to age.
