Grapes are cooled before processing, and all operations are carried out in the absence of oxygen using dry ice to preserve the aromas of the grapes and reduce the use of SO2. Destemming is followed by very gentle pressing in a vacuum press, and the must is fermented at a controlled temperature for around 15 days.
