Sorting, followed by 12 days of full maceration in temperature-controlled stainless steel tanks, with occasional pumping over and punching down, then pressing: the press juice and free-run juice from each cuvée are blended and racked for malolactic fermentation on fine lees before being transferred to barrels

Aged for 9 months in oak barrels (20% of which are new), lightly filtered before bottling
