Domaine d'Aupilhac

The Domaine d'Aupilhac, located in the town of Montpeyroux, in the Languedoc region. Since its founding in 1989, Domaine d'Aupilhac has been managed by Sylvain Fadat, heir to a family of winemakers spanning five generations.

TheDomaine d'Aupilhac vineyard covers 13.5 hectares of hillside vineyards, plus an additional 8 hectares in the Les Cocalières area. The entire Domaine d'Aupilhac is managed using ECOCERT-certified organic and biodynamic farming methods: regular plowing, hand-harvesting at optimal ripeness, fermentation with indigenous yeasts, and aging in large oak vats and barrels. Every effort is made here to produce some of the best wines of the Languedoc within the Coteaux du Languedoc Montpeyroux appellation, as true to their terroir as possible.
