Since the creation of the Les Aurelles Estate In 1995, Basile and Catherine Saint Germain began practicing very low-intervention viticulture and winemaking, working closely with nature. This approach goes beyond the standards of organic and biodynamic certification. All of the wines from the Les Aurelles Estate have a sulfite content below the biodynamic threshold and are certified free of all traces of pesticides and herbicides.
Domaine Les Aurelles isequipped with an oversized, ultra-modern winery that allows it to maintain high standards, vintage after vintage. In keeping with the approach taken in the vineyard, Domaine Les Aurelles wines are aged for a long time to give them time to fully develop and develop harmonious aromas and textures.

In January 2023, the estate was purchased by Bordeaux entrepreneur Matthieu Gufflet, who also owns three other wine properties: Château de Callac in Graves, Château Guiraud in Sauternes, and Château des Bachelards in Fleurie. The transfer will take place over several years, with support from Basile and Catherine Saint Germain.
