The Legacy of Pic Saint Loup
In 2023, L’Ermitage du Pic Saint-Loup will becomeL’Héritage du Pic Saint-Loup. This family-owned estate is managed by Jean-Marc, Pierre, and Xavier Ravaille. They have transformed the estate—which, after the Revolution, was a land of sheep, olive trees, and vineyards—into a flagship of the Pic Saint-Loup appellation. For the Ravaille brothers, producing wine means constantly striving for perfection. Nestled against the foothills of the mountain range, on the hills of Saint-Mathieu-de-Tréviers, the property has been farmed using biodynamic methods for several years now,and the estate has been committed to organic farming since 2009, with certification since 2012.

In the Pic Saint Loup region, during the grape ripening cycle, there are significant daily temperature fluctuations, particularly in the summer, when days are hot and nights are cool. These temperature variations are a distinctive climatic feature of Pic Saint Loup and contribute to the wine’s unique character. The estate’s vineyards HéritaPic Saint Loup area are harvested by hand at peak ripeness, preferably during the cool morning hours. Here, we select grapes whose yield has been carefully controlled through pruning, and we handle them with the utmost care from harvest to the vat, minimizing stress as much as possible. The winemaking process for the wines of theHériPic Saint Loup Summit is the crowning touch. The three brothers pour their hearts and souls into it. The wine is vinified separately, by terroir and by grape variety. Their identity and authenticity shine through in blends aged for one to two years in tanks or in barrels, the type of wood chosen to suit the specific grape variety.
