Alain Cavaillès
Based in the Upper Aude Valley, in the town of Magrie, Alain Cavaillès began his journey in 1999, at a time when he was still a novice in the field. A passionate winemaker by nature, he seeks above all an overall coherence in everything he undertakes, and this applies equally to both the vineyard and the winemaking process. Managing the vineyard using organic and biodynamic methods was therefore a natural choice, guided by Alain Cavaillès’s guiding principle: respect for living things.
In the heart ofthe Limoux appellation, on the Autan terroir, the clay-limestone soils and diverse climatic influences—Mediterranean, oceanic, and Pyrenean—bring balance and distinct character to the wines of the Moulin de l'Alon estate.
In this famous Limoux appellation, where sparkling whites reign supreme— Blanquette de Limoux, Crémant de Limoux, and white Limoux — Alain Cavaillès also produces excellent red wines under the IGP Haute Vallée de l'Aude designation. In total, the Le Moulin de l'Alon estate covers 8.5 hectares organized into 17 plots, planted with 7 grape varieties: Mauzac, Chardonnay, Chenin, Pinot, Merlot, Syrah, and Cabernet Sauvignon.
