Based in the Upper Aude Valley, in the commune of Magrie, Alain Cavaillès began his adventure in 1999, at the time a novice in the field. A passionate winemaker, he seeks above all to achieve overall consistency in everything he does, both in the vineyard and in the winery. Organic and biodynamic viticulture is therefore a must, with one guiding principle for Alain Cavaillès: respect for living things.

In the heart ofthe Limoux appellation, on the Autan terroir, the clay-limestone soils and diverse climatic influences—Mediterranean, oceanic, and Pyrenean—bring balance and typicity to the wines of the Moulin de l'Alon estate.

In this famous Limoux appellation, where sparkling whites reign supreme, including Blanquette de Limoux, Crémant de Limoux, and white Limoux wines, Alain Cavaillès also produces excellent red wines under the Haute Vallée de l'Aude PGI. In total, the Le Moulin de l'Alon estate covers 8.5 hectares organized into 17 plots, planted with seven grape varieties: Mauzac, Chardonnay, Chenin, Pinot, Merlot, Syrah, and Cabernet Sauvignon.
