Caux and Sauzens Castle
The Caux and Sauzens Castle is located 5 kilometers west of Carcassonne on the banks of the Canal du Midi, both of which are UNESCO World Heritage Sites. The history of the Caux and Sauzens Castle, built at the end of the 12th century, is closely linked to the history of a prominent Languedoc family, the Roger Cahuzac de Caux, who owned it until the mid-19th century. In 1871, the château was purchased by the Guitard family, who had been established in the Sauzens area long before the Revolution.

The vineyards of Château de Caux et Sauzens cover more than 70 hectares, including 45 hectares of vines located at the junction of the Malepère AOP and Pays de la Cité de Carcassonne IGP regions. These transitional terroirs, situated between oceanic and Mediterranean climates, are subject to the combined influence of the Marin—a warm, humid wind from the Mediterranean—and the Cers—a dry, temperate wind from the Atlantic.
